I’ve been trying to expand my cooking range, and I’ve been taking baby steps out of my comfort zone, which consists mainly of pasta, rice dishes, and a few standard curry dishes.

I think it’s my need for perfection that prevents me from exploring. The moment I see a recipe that is even slightly out of my comfort zone, or with ingredients I don’t like (eggs, mushrooms), I tend to skip. Another reason is that my husband, K, is extremely nitpicky when it comes to food. It’s caused massive arguments between the two of us. He likes his food a lot more overcooked, while the rest of us like the food to be a bit less cooked. So, whenever I cooked, I had to cook his portions a little bit longer.

With all these issues, it was just easier to have a cook and get him to cook separately according to everyone’s tastes. Also, K is a three-different-meals-a-day guy, and it was hard juggling home, kids, a career, and so much cooking.

With the goal of coming out of my comfort zone firmly in mind, my plan for 2025 is to explore more vegetables and salads and even get into baking (ambitious for me). I do want to try. After all, we are moving from good ole Bangalore in another couple of months, and it’s unlikely I will have a cook to rely upon.

To start with, last week, I tried this easy creamy potato soup. Now looking back, I don’t think that there’s anything remotely challenging in the cooking as such. It’s getting everyone to eat and enjoy it – which was the challenge.

Additional vegetables to make the soup healthier

As usual, K complained that the celery could have been less crunchy. Piglet loved the soup but would have preferred it spicier, which was easy to fix with an extra few chili flakes. I loved the soup unreservedly (and not because I cooked it)! It’s a very warm, heartening, and filling soup. I skipped the egg recommendation and added flour to thicken it. I skipped the cream but added heaps of Cheddar cheese. And the whole thing just felt like a very warm, comforting, hug in a mug on a cold day.

I loved the soup so much that it’s definitely an addition to my recipe card. And with all the things I love so much, I had to share it on my blog. Enjoy!
